    So, I've posted before a few times that one of my fave meals is a plate of 4 different kinds of enchiladas (beef, chicken, refried beans, and cheese) served at a local spot.

    I know there are plenty food threads here already. I created yet another. Sue me.

    Lately, I've pondered trying to cook on my own or make my own meals. No microwave. lol. One of my first thoughts is that this seems like it would be a pretty simple meal to start with. Plus, I could substitute all sorts of other ingredients for the filling. Steak, pulled pork, wild rice, creamed spinach, maybe even some brisket in one. Not sure how well any seafood would mesh with enchiladas, though I might give anything a shot (within reason). So, for those who like that kinda food.....any suggestions?

    I am not actually a huge fan of Mexican food. I like tacos but I could take them or leave them. But you should try Pinterest for recipes. I bet they have a ton!

    I made these last night and they were fantastic! I used cheddar in the filling and quesadilla cheese on top. I tried using corn tortillas because that's what I prefer, but they kept breaking so I used flour like the recipe called for. And of course you could use any protein, and red sauce if you choose. I'm not a fan of red though. It has a bit of bitterness to me.

    Ingredients
    • 8 ounces (2, 4 ounces cans) diced green chile peppers , undrained
    • 1/4 teaspoon cumin
    • 1/4 teaspoon chili powder
    • 1/8 teaspoon kosher salt
    • 1 tablespoon all-purpose flour
    • 8 ounce carton sour cream
    • 8 ounces shredded Monterey Jack cheese ,divided
    • 5 cups cooked shredded beef
    • 15 whole (6-7 inch) flour tortillas
    • 1 cup salsa verde
    Instructions
    • Preheat oven to 350 degrees F. Coat a 9x13 casserole dish with nonstick cooking spray.
    • In a medium saucepan, combine the chile peppers and their liquid, the cumin, chili powder, and salt; cook over medium heat for 1-2 minutes until heated through. Stir in flour and mix to combine for 1 more minute. Remove from heat and stir in the sour cream and 1/2 cup of the cheese.
    • On the lower third of each tortilla, spread a heaping tablespoon of the sauce, followed by 1/3 cup of the beef. Roll up the tortillas tightly and place, seam side down, in the prepared dish.
    • Cover with foil and bake for 25 minutes. Uncover; sprinkle with 3/4 cups of the cheese, spoon salsa verde over the top, followed by the remaining 3/4 cup cheese. Place back in the oven, uncovered, for 10 minutes until the cheese is melted and the enchiladas are heated through.
    • Serve extra sour cream on the side, if desired.

    And I have seen fish and shrimp tacos before, so why not in enchiladas too?

    I had a recipe for chicken and pork enchiladas, both with a tomatillo sauce. Used corn and flour tortillas. You could use shrimp or fish, but I’d make sure it’s grouper or flounder. Salmon might work, but it would definitely need some effort to hide the taste. Lighter fish might not work so well.

    @Aqua Marine - when using corn tortillas, make sure they are fresh, uncooked ones. To warm them up, use wet paper towels between each tortilla and only heat them in the microwave for about 15-20 seconds. They should then be pliant enough to roll and place in a dish for cooking.

      Typically, when they are made they are either uncooked or just heated a bit. If they are fully cooked, you will find they break easily. I haven’t figured out how to soften up cooked corn tortillas - yet.

    The meal you should order when you go to a Mexican restaurant is enchiladas.
    You get to taste their tortillas, their sauce, how they spice their meat and are the beans made there or are they out of a can.
    If the enchilada sauce is the same crap they serve with their nachos, send it back.
    The word comes from "enchilar" which means "season with chili". If the enchilada sauce is tomato based, it's not enchilada sauce. It's salsa rojo.

      Whenever I go to a new Mexican restaurant, I always try their enchiladas. Having grown up eating authentic Mexican in Texas, I know how they should taste. If the enchiladas suck, I will not go back.

    Most of those sound delicious, but I don’t think I’ve ever seen a refried bean enchiladas and I lived in Texas my whole life.
    Sounds interesting.

    Instead of sour cream try Crema, more authentic.

      Personally, I prefer flour tortillas for enchiladas. That’s how they were made where I learned to enjoy them. Hell, even the Mexican restaurants in Dallas in the 60s and 70s used fresh made flour tortillas.

      Now tacos - corn and flour.

    I love Mexican food but enchiladas aren’t my favorite. I prefer quesadillas or chimichangas. I’m not sure if it qualifies as a true enchilada if it has tomatillo sauce but that’s pretty much the only way I really like them. Especially a black bean enchilada with tomatillo sauce. Yum!

    Enchiladas are fine, but I don't make them and almost never order them in a restaurant. I usually prefer a carnitas plate, or if I'm in an American Style Mexican Restaurant, I usually get a combo with hard-shell shredded beef tacos.
